Wood Burning Pizza Oven
The first thing you notice when you enter is the magnificent wood burning oven- essential for the best pizzas. Here they burn ash - a hardwood (safe to use, it's low in sap)and hot burning and it's stacked in rustic piles around the walls. This place is open seven days a week and that makes a difference in the life of a wood burning oven because it never cools down...even so it take 3 hours each day to stoke it up and heat to the exact right temperature to produce the finest pizza. Knowing when the oven is absolutely ready to cook takes experience helped by an infra-red thermometer! Nothing is left to chance.

Next - the ingredients - two deliveries a week from Naples explains why the taste is so authentic - buffalo mozzarella, anchovies, proscuitto, tomatoes, basilicum, olive oil and everything else arrives Monday and Thursday from Italy.
The Pizza Menu
There are twelve choices of pizza - the menu is succinct and delicious, with seven classics, including Prosciutto San Daniele, Puttanesca and a good vegetarian selection in Quattro Formaggi, Margharita and Carciofo. Le Speciale are four seasonal recipes and there's a pizza of the week on the blackboard.
Don't take these pizzas home to eat! The best is to eat them straight away - there is a great wooden table in the back room and bar stools around the window seats where you can watch all the action in the lively Dwarsstraatjes, so there's no excuse.
